I suppose another obvious solution for mooring to an earth bank would be to dig a large hole then bury a decent sized steel disc maybe a foot across with a chain attached to the middle of it. Cover it back up with earth and tie the boat to the chain.
The question being how deep would the hole need to be.

Fill the hole with postcrete.

In fact when it is delivered on Friday I will be leaving it on a field mooring at Henley for a while so will have to take 4 of my stout pins with me. And my sledge hammer. no no no no no! please don't try to moor in a field, even if you do want to show it off at the regatta.
