Try a APC 8x6 on it. Provided you can modify it to fit on the shaft properly you will be impressed. And being RC plane gear they are very well balanced.
You get a little bit of a wobble on the tiller using large props but an 8x6 should be okay.
Get a clamp meter on one of the power leads just to make sure you are not pulling too much.
It's nice to see a cutout on that motor. I really like that as it protects it from jamming problems..
I recently bought a 36v ebike battery for my 36v Minn Kota on the dinghy and it has a 30amp discharge fuse in the battery.
Blew that today when I took the kids round the Olympic park which is full of blanket weed. Still it does protect the motor. A fuse is cheaper than a motor...

Just checked the box and have a JXF 8x6 happy to post it to you if you like. It's surplus to requirements. It's a bit more flexible than the Graupner prop I settled on but something to play with.
It won't bend much with a 28lb motor.
Something to play with anyway if you wish.

MM certainly has more experience with these leccy things and since the prop he suggests is plastic and cheap I know what I'd try first. The Seagull racing mob prefer plastic props when trying for go-faster mods. However drag is a big issue in the form of pitch, and four blades not three is probably significant. Anyway I have a prop that might be whizzo for the purpose. Its the same as the two-bladed prop on this bad boy: Note how the blades are canted back. Why? I have no idea. Looks cool though. Yours if you want it I guess.

That is one groovy motor. I hope you have not forgotten about your 102 which is on the back of my boat ! ETA this one I know it is a bit awkward at the moment to collect things and remain socially distant but it's not going anywhere in the meantime

Although you do have to wonder if the guy who spannered it was a follower of Rastafari or not. No, not forgotten about your generous offer. This lockdown business is getting to be a bore. Surely its going to collapse soon?

Yes I was going to suggest an oilite bush for that job. They come in loads of sizes. Just got my laser cut spacer ring I ordered so I could press a brushless motor into an old Minn Kota housing. That should be interesting. It was a perfect press 🔨 fit. Tap tap tap not whack whack whack. Anyway motor is good for about 4hp on 36v. Slightly more than the original Minn Kota which was about 1/2hp... Bit of a bodge but all good fun. @gazza if you don't want the prop from @nemesis then I'll try to claim it Am thinking of installing a decent sized brushless motor as an inboard configuration on the floating electric beer drinking platform. Currently it does about 4mph with the 28lb Minn Kota but with proper power it will really shift as it is a very fine shape, long and thin. It would be cool to be able to achieve 13 knots with it.

Is the seagull metric? I would have thought it would be imperial ie 12.7mm... Everything Seagull sure is imperial (well 99.9%) but the propshaft of that electric thingy is reported as 8mm...isn't it? Anyhow there are other sizes on that website.

Nice prop! Just finished the initial prototyping/bodging of my brushless conversion. I bought a 70mm diameter brushless motor already in a sealed housing from Alien Power systems for £120. Good for up to 4hp (3.2kw). That's at 50 volts so I reckon about 1hp flat out at 12v. With the large diameter RC plane prop it should also be very efficient in watt hours per mile terms. Suspicion it might make my old brushed Minn Kota look a little boring... Motor is a 100kv 6384 I believe, already built into a ss sealed unit. KV is rpm per volt. I got a laser cut disc to match it up and bodged it into the end housing of a defunct Minn Kota. Seems to work. Proper testing tomorrow on that. I think it may be quite a nice unit. Prop is one of the flimsy plastic ones. It does bend a lot but for testing is ok. Will use an APC or a Graupner eventually. Something quite big like maybe a 12x9 or whatever. For efficiency. The motor is quite powerful but being sensorless it won't self start very well with too much blade on there. Good for playing with. Some of these little brushless motors are amazing.. Been eyeing up the 56115 units several horsepower from a motor measuring 56 X 115 millimetres !!

Maybe when I come to collect that 102 I should bring my almost bog-standard 40+ (the most-produced outboard in the history of the world) for comparison purposes...

I used to have a 40+ years ago. And a 40 featherweight even longer ago.
Nice things but for small vessels I am getting more and more won over by electric gear these days.
