I just bought a new dehumidifier that allows me to set a humidity level for it to turn on. What is the ideal humidity level for the interior of a boat to keep away condensation and mould but not waste electricity keeping it too dry?

To be honest, I think you'd be hard pushed to keep the interior of a narrowboat dry using a dehumidifier, nature abhors a vacuum and damp is going to be constantly fighting to get back in there.

If it's a dessicant one, maybe think of it as a form of warm air heating that handily dries the air too.

50%, but dont forget to close the vents or you will be trying to dehumidify the world.
I use folded over bathroom sponges in the mushrooms, and cardbord covers held in place by blutac for the low level vents.
I also use two oil filled radiators on a thermoststic plug, set to 4Β°C, to prevent the domestic water from freezing.
I can be ready for an impromptu winter cruise in less than 10 minutes.

Well it seems to be doing the trick. Humidity outside is 92% and close to freezing. Normally I would have a lot of condensation at this point, but it's 40% in the boat and no condensation at all.

Minus 10 Centigrade here, outside, this morning, all humidity has dropped to the ground
