I can't remember the exact details, but the air in the plastic enclosed meat packaging is different from the air we breath - prolongs shelf life - increases profits. I believe it's nitrogen. Air is 78% Nitrogen, 18% Oxygen. Nitrogen is not very reactive, I think, so the meat is left in a sterile environment. ................ and 1% argon. the remaining 3% is vacuum. Foxy, an oxygen deficiency meter, commonly used by elfinsafety bods in tunnels and deep excavations, would be shouting at you with those figures. O2 content is 21%.

Im gonna buy a van and start a milk round with glass milk bottles, bread in paper bags, fresh fruit and veg in a paper bag.. This time next year rodders! Here in south west Wales, we still have a proper milkman with glass bottles.. Mind you, he is getting on a bit and tends to drive in the middle of the road !
