Yes long way to get some signal crayfish then. Lots of farmed shrimp and prawns from Asia though, I imagine?

We mostly get the farmed ones from Thailand in these latitudes. There are North Sea prawns available. But they are not large creatures.

Will be even more air miles for me to get signal crayfish down here🥴 Your rivers and waterways not infested? The Calder is crawling with them, came up to a dry pound at Kirklees Cut, loads scuttling in the mud. Came across a lad fishing with cheese or bacon or summat off the lock landing, he had a bucket full. I have a couple of net traps I've picked up along the way but not tried them. One is supposed to apply for a licence to fish a particular area, officially. Having now read your post, I thought Yabbies were a delicacy down under - a bit like pubic crabs!
