Anyone on here know if there is a carbon fibre type sheet material that comes thick enough strong enough but importantly light enough to make a 6 feet by 30 inch cover for the opening into an engine room

Bit more detail. Are you looking for something to stand on?

Sorry it needs to be strong enough to stand on/ walk over but light enough to lift single handed in an emergency

6ft seems a long span. It would be more usual to put at least one crossmember drainage channel in and split the board into more than one piece.
Carbon fibre sounds very expensive.
The only things I can think of is a well designed aluminium "honeycomb" arrangement or a custom GRP thing. That might be light enough.
Probably not though.
Assuming it's a stern deck engine hole cover.
Another option with a single board is to hinge it at one side and use gas struts to help lift it.
this will give access to the engine bay while to cover stands up on one side held in place by the struts and preferably a safety chain as well.
Single sided access is admittedly a bit of a nuisance. Maybe it would be possible to arrange removable pins and have hinges and struts both sides so you could choose which direction it opens.
Or put a linear actuator in there. I've been tempted to do that before. Just press a button and the thing opens up lengthways as far as you like. Use an old satellite dish motor as the actuator, or a wheelchair crane arm actuator (usually made by Linak).

I agree with magnetman. Something with those dimensions, lightweight, hardwearing, and weatherproof would inevitably be pretty hard to source at a reasonable cost. I might consider Phenolic Ply 1/2 inch thick with some aluminium bracing maybe, or braced aluminium chequer plate (rattling can be an issue).
