As often as possible, thats why i built the grub shack, only have the on 50cm kettle bbq, plus the pizza oven, which we fired up last night, i also have a little gas camping stove to use for onions and stuff. I love cooking outdoors this time of the year, we have everything we need down the garden with the fridge and 42" tv on the wall, chuck in the corner sofa and shade and it just makes sense to spend every available minute down there enjoying the weather. Next year i plan to get a big 6 burner gas one and maybe a new charcoal one and even a better pizza oven. On the boat i have a little cheapo bbq which can just about do steak/burger or sausages. Some of the pistonheads BBQ gods say these go down well for not a lot of money - best of both worlds? www.aldi.co.uk/gardenline-dual-fuel-bbq/p/709910444155400

Ours is just a little fire pit ... gather some kindling ... light a fire ... as flames die down burn something on it. May have to get more adventurous with what I cremate Rog Doesn't need to be anything fancy, if you can burn wood, you can cook on it.

One of the best things i have learnt is the different cooking methods, direct and indirect.
Direct is cooking over coal/flame, so anything you would fry on the cooker you do this way, steak/burgers and such to give it a nice crisp outer, not burnt though!
Indirect, not cooking over coal/flame, so you build your bbq with the coal/wood on one side, or in mine in the center, then put food round the outside or on the other side from the heat, then close the lid on the bbq and get the vents set so the heat source doesnt go out, this method you would use for stuff you usually cook in the oven, so chicken on bone, sausages... basically low and slow, you can then finish over heat to get that crispy outer.
Rubs are great, i like to make my own up, just google and you get loads of ideas, simple base rubs are something along the lines of brown sugar, salt, pepper, onion powder, garlic powder, then add some heat with something like chilli powder or paprika or cayenne pepper, rub it all in the meat and leave for 20 mins before cooking.

Yeh rubs give that extra mmm Dave. I occasionally wrap a whole salmon, very occasionally other large fish, in lots of wet newspaper and through it in a fire. Itβs a wonderful treat.

I've always made my own rubs and marinades ever since I saw a butchery counter where the dubious stock was removed and treated for sale to unwitting customers.

we do the occasional bbq with punters on ... if I like them and can be arsed - quite often though, I end up cooking way too much meat and end up with a fridge full of left overs (which I admit is quite handy for midnight mumchies).
No longer do I bother buying charcoal but just use the disposable ones on top of a proper bbq instead... I think we've only got a couple of the Β£1.50 ones left now that despite what they say on the side "ready to cook in 20 mins" need a good 45 before they are REALLY usuable.
Oddly enough, we too had our last bbq at the bottom of Bosley locks the other week.

But two years ago I was working in a coop petrol station and at the end of the season I brought all the charcoal cheap. The twin bags of instant charcoal were 20p and I think I Brought about 30 of the disposable bbq for about 4 quid. Still got quite a few in the shed. You maybe able to grab a couple of bargains when they change to selling coal.
