The reason why you get soggy chips from most chippies is that the oil is worn out' or rather saturated with the residue of many previous sessions...and the reason why KFC-type chips are always crispy is because they are processed in the factory for optimum results with that medium.
I would bet my last penny that in the week leading up to the National Chippy Awards (happens every year) the first thing the shops who fancy themselves a contender do is to change the oil...makes a huge difference.

Hydrogenated vegetable oil, which i s used over and over...very bad. But is discarded at the end of the day following the required guidelines. I'd have to see it to believe it. But also, the oil itself is processed.

Hydrogenated vegetable oil, which is used over and over...very bad. Yes, it's shocking. Everyone knows that potatoes should ALWAYS be fried in beef dripping. They sure taste better that way, but you have to go a long way north these days to find a chippy that still uses it.

Newsflash: most milk currently available is both pasteurised and homogenised. Yars ago I was visiting rellys in Ballina, Co. Mayo. They had a dairy farm. I was offered natural milk straight from the beast. Nearly threw up. Yuk yuk yuk. Pasteurised for me thanks. I recall gold top, silver top etc but not that I lament its passing.

How much is wasted on unnecessary medications, prescribed for no real reason other than to placate the individual ? I think the main reason for unnecessary prescriptions is that the NHS are sales representatives for the pharmaceutical industry. Rubbish
